To see the dolphins you just have to be lucky, but of course, keep your eyes open, change beaches during the day and ask around..people always know where they are...
it's probably going to be easier for you to see them just snorkelling, as when you are diving, you are tied to the schedule and stuff.
We did scuba diving too, amazing, but there is a lot to see there just snorkelling..have fun
