Thanks, I'm kinda new to Photoshop, and I needed to know what gradient maps were. That's going to help me a LOT in future tags.

Gradient maps are used for more than what this tutorial shows you.

In fact, all he did was change the image to black and white than restore some of the color, there are millions of ways to do that, you should of focused more on gradient maps and not just b&w images.
