I bought a pudding basin/mold with a lid. This is my first time making a pudding. Just so I am clear, I leave it IN the mold after cooking and let it rest in the fridge until Christmas? If so, is the lid of the mold sufficient or should I use something airtight?
@FootOdger - You can, but it won't taste as mature, full, and gorgeous. The longer it rests after the initial steaming, the better. Also, try adding a tablespoon of brandy once a week until Christmas. (if you open it to add the brandy and find it has some already resting on top, wait another week to repeat.)
Letting it rest costs nothing extra in work, but the result is well worth the wait.
