there are things said in some episodes of the original UK versions that aren't said in the US versions with ringo. "he's too expensive,...get another engine instead of you" or the tunnel episode where sir topham hat said "leave you here for always and always and always" the VHS ones that I have are all different. why the 2 diff narrations by ringo?

Filming Goofs. They don't film everything sequentially. They story-board out an entire series and film all the scenes on one set at a time. Often this results in continuity errors. In this episode note how the brake coach in Henry's train starts at the front and then appears at the back in the next scene.
