This plane is actually going transonic. The airspeed is very nearly at mach 1. Look at 0:10 and you can see the shock wave going straight up and down, indicating he is nearly matching the speed of sound. Some areas of the plane, such as parts of the wing and behind the canopy are experiencing supersonic airflows. See Bernoulli's principle to understand why. This is an awesome video BTW.

When you see him glowing, coming from the bridge and a couple of times before he hits show central, THat is him just hitting mach I and then pulling off the throttle as to not break the sound barrier. This is the fastest they ever went above the San Francisco Bay. If you take a look at the 07 Pass, you will notice the vapors coming up from the water but no Mach Cloud.
The plane enters the bay on the San Francisco side of the south tower just above the toll booth and swoops down 14 Ft above the bay. You need to know the sequence of maneuvers, to catch him at the bridge, as they do their "Left Echelon" maneuver. That is when four planes are lined up tight, one behind the other in a diagonal line from show left. At that point you'll want to keep your eyes on the SF side of the bridge. You will see him glowing on approache. Yes, this is as real as it gets.
