I wasn't adventuresome enough to do raw onion/garlic, so I very lightly sauteed them in the butter (yes butter...and sour cream...life is too short for substitutes!) before adding. I found the dish quite yummy, but no one else liked it much...texture is quite different than potatoes.

Wait...you're using yogurt and parmesan cheese but then use butter SUBSTITUTE? Why?? Why not also use yogurt substitute and parmesan substitute and maybe even cauliflower substitute? After all, there's no way the real thing can be healthy for you.
oh, and btw, i have been making this recipe for years, i was once an avid Atkins dieter, I've since dropped Atkins, yet I still choose low carb dishes over starchy things, not only to be carb concious, my body isnt ussed to heavy starches anymore, and i prefer alternatives like these

Oh wait, maybe Rachael Ray invented Cauliflower too...She probably also discovered America and she was most likely the one who originally sliced bread. Mashed cauliflower is a great healthy alternative to potatoes but margarine or other polyunsaturated fats are not "clean" swaps for butter. Soybean, canola, and corn oils are not "natural" and our bodies are not designed to consume them no matter what the profiteers of these products say on their labels. For everyones health please do not promote these oils over healthy, natural butter.

There's a lot of conflicting health info out there and it takes a lot of time and effort to discern what info is credible and what isn't. As a society that over values consumption and commodification, it's unfortunate but not surprising that a lot of the nutrition and health information our society accepts tends to keep big agra healthy but not it's consumers. Glad to hear you are staying perceptive and open minded to health and nutrition. As our society demonstrates, it's easier not to.

I love mashed cauliflower No need to add cheese, yogurt, butter, or any other unnecessary calories. I just add garlic/herb spices.
I make thick, chunky mashed potatoes, then I fry them into pancakes. And eat them with walden farms calorie free maple syrup.
