  • @newklear85 I'm French Canadian and I say it's 'official' so, that's what works for me. Not sure what Qubec's tatstes like. It's been many years.

    I think there's is a bit lighter in color but no compromised tatse with this stuff.

    problems: i undercooked my fries because i was eager, i made my gravy too thick and they dont sell cheese curds anywhere near my house, but it was still awesome

  • Australia does not have this type of cheese and the closest i can use is bocchini cherry size cheese. Im going to give it a try today. Also i will look about for a cheese maker and see if they can produce curds.

    Boccicini is like Mozz and would work fine.

  • Hmmm - not sure about this. Never heard of it until my Canadian friend raved about it. So it's basically chips and gravy (like we eat in England) but you use curd cheese as well? What does curd cheese taste like? Does it mix and melt with the gravy??

  • @Rachiejane1 Yes, they melt a bit into the gravy. Curds are quite salty but too delicious to worry about. Ya just gotta try it. It's addictive. Been hooked for decades!

  • i bought a bag of St. Albert's cheese curds last week. they were delicious. the art of making poutine has indeed turned into a travesty. not only is it near impossible to find poutine made with cheese curds, but, most places don't even use real cheese anymore...instead, they slather on cheap, oil-based shredded mozerella-wannabe crap - and then drown it in the cheapest gravy, which usually has the worst aftertaste...that it, if it has any flavour at all. nothing but a big, soggy mess!

  • Ive used mozzarella AND MILD white cheddar blended. (1/2 n 1/2). Almost as good. Keep the pieces a bit chunky. Don't grate the cheese.

    The gravy comes from a restaurant supply store. It's in the spice aisle, in the grocery store. Comes in a 1 lb bag. TRIO brand.

  • my dad, who lives in northern new hampshire, introduced me to poutine - mmmmmmmmmmmmmmmmmmmmm good eats. i have used it as a template for other knock-offs - leftover noodles with cheese and gravy, left over rice with cheese and gravy. you just cant go wrong with cheese and gravy, cheese curd all the better :)
