@andrewdelmar a lot of southern Italians use peas in their Bolognese sauce. My family originates from Sicily & we put peas in our sauce. So yes it is real bolognese ans not an amateur mistake at all.

@ranixxbollyfan I suppose, though it really is a key ingredient in this. Without it, you will be missing alot, and I mean alot, of depth and richness to the flavour. If it means anything to you, because of the length of cooking time in this recipe, most of the alcohol is evaporated by the end. Roughly 20% or less remains, and the longer you cook it, the less there is left. But 20% of 11% of one cup is not much. What we want out of the wine are the flavour elements rather than alcohol.

@ranixxbollyfan De-alcoholized is non alcoholic. It is basically grape juice lol, but richer in flavor. There is zero alcohol in it. Are you able to drink that? If not, I suppose you could skip the red wine altogether it it would still make for a good meat sauce, but if you can use the non-alcoholic wine (i.e. grape juice :) ) then I recommend that.

one advice: when you cook ground meat always mix it first in water and then all that "mixture" add to pan for cooking... it a lot better taste,structure,flavor.....
@wavokiaado Or, if if your concern is for religious reasons and not simply because you don't like drinking alcohol, you can leave out the red wine and replace it with some beef broth (Laura said so herself in her lasagna video ^^)

nice recipe but try cooking it really slow (low heat 5-6 hours) you can gather family (especially kids) to help with it and make a family day out of it and end with this great dish, its really worth the waiting cause the flavor will blow you away, cause its like a ragout and the slower the better
