thanks for the post !! store chow chow just don't have the same taste ,,,I like it hot and spicy in my beans and cornbread ,,bet this would be good with fried okra too !! a topper for baked pork tenderlion ,,, yummy !! ,I dehydrated most of my garden produce but the chow will get a spot in the pantry space this year !! cabage and tomatoes out my ears !!

We made about 10 gallons this year and its just so yummy! We originally used it to spice up a plate of beans but the Chef I work for eats it out of the jar. Its also good in potato salad or on bratwurst or just about anywhere you would use a relish. If you come down for Southtube3 this year I will bring you a jar;)

All together we put up about 50 quarts and 30 or so pints, it was hard work but well worth it. These days we freeze everything but the chow chow and pickles to save energy and space. I have a great aunt that used to make it every year till she got too old to do it. After a couple years of doing without, mama found a recipe and we have been doing it now for about 7 or 8 years. This year mama lost the recipe and I had to do it from scratch, best year yet in my opinion:)

My suggestion is to get a "Blue Ball Canning Guide". Canning is easy but you should follow a recipe the first few times to make sure you get it right. If you mess up it could result in food poisoning or botulism.
When I lived in GA I did a lot of canning. I loved okra stew. I had a garden with everything (well almost everything) Me an my friend world can all the time. Corn, tomatoes, green beans an more. We even canned creamed corn. Oh my that was like a billion years ago. My X an I just went out today with my grandson an got a pressure cooker. I used to own one but who knows where it ended up:)Cucumber...we made pickles too.
I dont have a pressure canner right now so Im kinda limited to high canning acid stuff, but I have one on my Christmas list!
My garden is tiny, but my brother put in a good sized one this year and my brother-in-law usually has surplus veggies from his so we can and freeze a lot. Mama's freezer is just about full from all the yummy stuff we put up this year. My cucumbers were crap so we only put up a few pickles, but next year its ON!
The cabbage is more filler than anything else (you dont even notice it) and its great in potato salad and on bratwurst. Back in the old days it was used to jazz up beans and add green veggies to the diet in winter. I will let you taste some while you are here if you want.
How much salt n sugar is required? There is no listings into quantity or order of mixing etc
