I have a question. Is it possible to backup the SAM file, remove the password with chntpw, and then when finished working put the old SAM file back so that the user wouldn't notice?

Not with chntpw. But, you can copy the SAM file and use Ophcrack, Rainbow Crack or an online cracker to tell you what the password is.
