Don't use recipes with shortening in a hot climate-there's just a general rule for u-I've seen shortening based icing slide right off a cupcake in the heat. THe ones I use should hold up well, but the best for you will always be an Italian meringue buttercream-Google 'Italian Meringue Buttercream Cake Journal', and that's the best recipe I've found.
Betty Crocker Brownie Mix will make about 24 cupcakes, and the recipe I have listed only makes 16 with those measurements. But, the "flour" -or dry mix- in brownie mix you buy is not all "flour"-it's dried chocolate, baking powder, and other dry products mixed with the same amount of "flour" in the recipe I have listed. To make brownies like a certain boxed brand, you can look to see the exact type of chocolate they use-or just use the box mix. Thanks for the comment! :)
what size tip did you use and I just bought a 16inch featherweight decorating bag...do i even need to use a tip if I want the exact same effect you just did for the frosting? I'm looking to do exactly what you did...I have a coupler but I'm not sure if I need it and if I should but the seperate tip if I can just use the bag...help...I'm new to all this. :o) thx

You want to whip to the stage of "soft peaks" to "stiff peaks"(google that for pics). When you dip the whisk back into your cream, then turn the whisk bottom side up, the whipped cream should look shiny, and much like marshmallow cream. That may have been your problem.

Remember to take brownies out of the oven BEFORE the end of the cook time-probably about 4 minutes before-Brownies technically continue cooking when they're taken out, and they'll look a little undercooked towards the middle, but if u keep them in till they totally look cooked, they'll be dry and hard. :)
Oh! and the frosting I made is meant to have a grainy texture, and some people prefer a creamy texture-if u want that, go for a traditional buttercream.-Here's a good recipe. Make sure you don't put TOO much icing on them-some people don't like the icing to overpower the brownies. :)

If you want to do 2 dozen like I did-
double the brownie batter-you will get u 32 brownies(u'll have extras).
And, triple the icing recipe if you'd like as much icing as I put on each one. You'll be able to frost 24.

You can, but try to find whole milk, and add about a teaspoon of melted, unsalted butter to the milk for every 5 tablespoons of milk you use.
