  • Thanks this is great. I've never bothered properly filleting a mackeral because of the way we eat them. Our Northern European variety doesn't seem to get too big where we catch them, so they're often just grilled and eaten quickly. If buying in a shop they'll be smoked ready to eat. I find that mackerel go off very quickly so it's best to get them real fresh. If I can get a fresh one I think I'll experiment with other country's takes on this beautiful fish.

    No, this type of knife is called "Deba" and is used for filleting the fish. You can get this at any Japanese knife store.

  • When seasoning with salt (or outer similar "spices") you don't acualy have to sprinkle it from too far away, just grab some salt and hold it like if you were holding a pen upside down (palm up) and shake your hand left to right letting the salt flow from between the index and the pointer finger.

    Requires some pratice but works better and does less of a mess :)

  • I cut the head off and gutted it. Then found this video. I did not cut into the top of the fish as I forgot and the filet was not the best. I've just ordered some tweezers from eBay for next time. Thanks for the video!

    We Japanese enjoy fish skin, believe it or not. It actually is tasty when cooked right. If you don't like the skin, please feel free to peel off. It's like chicken skin, some people loooove the crispy fish skin...and I'm one of them.
