At the bottom of each report there's a filter box, you can exclude certain traffic or view traffic from only certain sources. I don't think you can "delete" a traffic source from your analytics data, but I could be wrong. I could see how you'd may want to sometimes, if a site sent you tons of irrelavent visitors that totally messes up your reports. That's a good question!
