You should try making your own kimchi. Theres a youtube user called Maangchi, who makes videos of korean recipes, a few of them being for different types of kimchi (like cucumber kimchi-My favorite!) while the stuff from the asian market is awesome, nothing beats homemade : )
saute it in a little dab of butter and sesame oil (optional) and pork. really good!! you can sprinkle some sugar in to taste as well. this stir fry goes great with grilled, steamed, microwaved, fried tofu.
that probably means the it was more fermented then youd like. when that happens, you can make a great stew out of it like maangchi shows you. its soo addicting... its easier to have for beginners too in case the rest of your family isnt so keen on it yet. itll end up tasting similar to a sweet and sour soup. i know im going a little crazy over kimchi here but there's just so many ways to have kimchi then just straight out of the jar when its at its harshest ^^ its also good 4u!!

"Kimchi" is the pickling process (you might call dill pickles "American kimchi.") Cabbage is the most common ingredient, but any vegetable can be made into kimchi. My favorite is broccoli kimchee. :)

I have been just down the road from you, in Ann Arbor, visiting my mom. Since I
can't realistically try for grasshoppers here, I stopped and got some Kim chee at
Whole Foods. It was OK, not volcano hot, just spicy, but it WAS Kim Chee.
(I'm sure there are Korean grandmas who make it REALLY hot, but this will do
for now)
