Nice vid! I'm a real fan of making fresh dashi, and make it a couple times a week but soy sauce instead of salt adds another extra layer of flavour I think =)
@Danoftouni Soy sauce has strong flavor itself and can overwhelm dashi's flavor. Using salt is easier to preserve dashi's flavor. In Osaka and western part of Japan, udon and soba soup is almost without soy sauce. In Tokyo and east, soup is darker with soy sauce.
The only thing I know how to say in Japanese is:"MSG Sucks" Did you hear the accent? It was pretty good huh? God I love Bonito flakes. I use the smoked kind for extra flavor! That is one ROCKIN' bowl of Soba my man!
@MrEZCooking Yes, the Bonito flakes ware always smoke dried with nice smoke flavor. It's kinda expensive though. It's cheaper to use the MSG dashi powder. So, this is high end and authentic traditional. MSG has been here for only like 100 years or so.

You can get kelp(konbu) at some super markets deal Japnese foods. If you use other seaweeds,they don't work.
