Well, the virtual choir he's doing now is for Lux Aurumque. You go on Eric's blog, and search for the post where he put up the notes for the voice parts. Then you learn the notes, and record a video following the instructions here: watch?v=uh1c2xWVWiA. That video pretty much explains it.
Good luck. Submissions are due before Dec 1, I believe. I'll be sending mine in soon. :]
