Chicken and Vegetable Cobbler

This is what we always had for supper on Sunday nights after having roast chicken for dinner. Mom would make a batch of drop biscuits and presto, chicken pot pie the easy way.

I have tried a similar dish like this before but I did not use chicken, but instead i used duck.

For another quickie topping, I like to prepare packaged stuffing mix, but add water to make it almost as wet as Mark's biscuit dough (baking time dries it out). Spread that over chicken pot pie filling, before baking.

It's a hit with stuffing lovers!
