  • Chef, is there a particular reason you add the cooking wine at the beginning of your dishes with the garlic/ginger? I've usually seen people put the wine in with the premade sauce... Just wondering, thanks!

Your video seems to be for more advance cooks because you didnt mention the ingredients and measurements of conrstarch mixture. (water and cornstarch). Also no mention how much oil and oil type. EXCELLENT RECIPE AND VIDEO. DEMO CANT WAIT FOR more VIDEOS on MA PO TOFU, AND EGGPLANT WITH GARLIC SAUCE. General Taos chicken. thx.
