ahhh those eggplant look fantastic! Dang that's must have been a big LUNCH! I hope i learn to garden more fruitfully. 4 meals in one harvest - that's fantastic!
@TheSheChef Those eggplant were the most prolific I've ever planted. They were the Japanese "Ichiban" variety. You must try and plant them next year. Of course, we didn't cook every piece of produce that day. Some went into the freezer. Looking forward to eating them later this winter!! Cheers!

Thanks! Yes those squash were like Energizer bunny. We finally just pulled the huge vines up to stop the unending mess of squash. The beets were amazing. I had never grown any before and didn't know how they would turn out. Easy peasy.....I did start them in a tray, but found that the tap root gets long really fast. I won't do that again. I will direct sow next time. One of my daughters had never eaten fresh beets....she ate almost the entire crop of them!!

That was a nice mess of produce. The EP squash just keeps going and going, one of my favorites. Beautiful beets too.
