  • The only issue with the friend Kababs is the extra calories. I would choose anything oven cooked over fried, any day..well except for Diwali and other interesting festival days :D

    I12 years ago a Indian lady gave cooking classes and she said "you can cheat but it is still cheating". I dont mind, sometimes cheating is very helpfull.

  • The nation must be great cooks by now with all this cooking recipes on here. Right my goal is to learn to cook now from YouTube. Thank god for this, cookbooks are useless and not very helpful. These videos are almost as good as having som1 at your home showing you. Just 1 problem some ingredients are unknown or hard to find.

  • try cooking it longer, covered with foil, at a low temp, like 325...then half way through, grease the kabob's for tenderness...

  • the meat you cook in open flame is called kabab, you fry the meat or put in the oven it is not a kabab.

  • @kcdrum, basically you are supposed to grill seekh kebabs on charcoal, to imitate that, he is putting them in the oven. So put the oven on BROIL, and then watch the kebabs, once they are browned on one side, flip over, and repeat the "watching" process :)

    I really think that if you are using chicken vs. beef or lamb, shallow fry them. (not deep fry)

  • Most grocery stores and meat markets I know of will grind your meat if you request it. Go to the meat department and ask them if they will do that.

    They usually have grinders there to make their fresh ground meats. You could also get a fairly low cost food processor/blender and that will work, too.

  • hi, your kebab looks great but some comment:

    there is no need for egg and bread crumbs if you mince the meat in a food processor. In fact if you add egg and bread crumbs it will not be called kebab anymore it is called hamburger and kind of fried kebab.

    Also we dont add a lot of things to the minced meat we just add salt and pepper and babeque the kebab because we believe that the flavor of kebab will be lost.

    You are so rigt about the fat.

  • Hello. I made this and it was ok. It was tasty. But I had a problem putting it onto the skewers, so I added flour ..just a bit to make it less moist. It was nice and soft inside. but outside was a bit crunchy, How Long we were supposed to put it in the oven for. I left it in there for 10 -15 mins. MAybe thats y it was crunchy, Hmm...otherwise I give it 7 out of 10.

  • Thanks for the excellent recipe for sheekh kababs. Mine turned out fabulous. They looked amazing and tasted even better. My family is so glad that I spend so much time watching your vid clips. I made mine out of mutton and didn't add egg. I shaped on the wooden spoon and then baked at 500. About 20 mins and Voila! They were nicely charred and succulent too. Thanks Sanjay

  • I've minced meat successfully with a food processor or you could even use a blender (adding the meat in small batches)...you could also buy it already ground-- make sure it's not too lean...

  • Also, some butchers are cool and you can purchase some chicken thighs and ask yhem to ground em up.

    My best results came from buying ground meat AND processing it.

  • debone, lay it on a board, take a big knife:

    hold the end of knife,

    beat the meat like you're playing a drum,

    not much force needed but do it fast

    turn sideways, 90 degreses, & repeat

    don't have to pulverize/mince it. works with lamb/steak too.

  • marinading any kebab in grated onion (mixed in) & lemon or lime juice helps. some insist on 24 hours in case of lamb.

  • excellent.........i made this kabab at home but i did something different i pressure cook the chicken before i minced it so it was easy to minced the chicken after pressure cooking...
