I love how you know how to mix the right ingredients to get the best tasting food, I try to imitate your style at home - actually made your beef stock at home once. @StriderHiryu1200 white vermouth, or really some other subs that are acceptable and you will not be able to tell or make the dish bad are dry sherry, marsala or a very dry white wine. it'll taste just as good.
Jean Pierre actually LIKES the stuff he cooks, he gets a lot more excited about it than any Food Network chef, with the exception of maybe Emeril. And he comes off as lot more genuine because of it, I think.
you might use a little nip of coconut-broth or even reduced fish-fond @ lach119435..and: don´t forget to add (as chef jean-pierre says) a"littil bit of "parsily"!
in any Alcoholic Beverage(Beer, Wine, Rum, Tequila etc...), the alcohol will evaporate with the heat of cooking, leaving behind all the good stuff. even kids can eat it... ;)
