  • hey chef... can you post a video on how to make fresh tomato sauce??? You had a video on how to deseed and skin a tomato, but did not proceed on how to cook the sauce.

  • He is fun to watch. I bet he could cook up an old shoe and make it look good.

  • Lol Chef I love your videos, they should put all your videos in high quality format on youtube. I love how you know how to mix the right ingredients to get the best tasting food, I try to imitate your style at home - actually made your beef stock at home once. Awesome touch with the vermouth on this one!

    Lots of success to you!

  • haha i've taken a couple of his classes his accent is fuckin histerical!

  • it's unbelebable!

  • What did he compare the Thai chili peppers to? Sounds like he says 'Scotch Bandits'. I dig his Maurice Chevalier laugh towards the end.

  • Très bon ! Merci Chef.

  • 357drolet

  • thanks for the info stapler 78!

  • whats again in the green bottle? white what? can i substitute it with a regular white wine?

  • he said white vermouth. its a fortified wine which you see in martinis.

  • well cilantro is american, brits say coriander, may it be seed or the leaf

  • almost got the recipe... but what was that red stuff again?

  • Thai chilli peppers?

  • white what???

  • White vermouth

  • @dssmorrow i thought it was vermount~~~ PS: is that a non stick pan? heart aches to hear it getting scratch

  • @StriderHiryu1200 white vermouth, or really some other subs that are acceptable and you will not be able to tell or make the dish bad are dry sherry, marsala or a very dry white wine. it'll taste just as good.

  • @cliffcox66 Thank you for the additional choices and critic on the taste... very helpful

  • @StriderHiryu1200 Noily Prat, Cinzano or Martini: different varieties of vermouth :)

  • Jean Pierre actually LIKES the stuff he cooks, he gets a lot more excited about it than any Food Network chef, with the exception of maybe Emeril. And he comes off as lot more genuine because of it, I think.

  • why did i watch this now im hungry

  • he said "a little bit of parsley or cilantro"

  • you might use a little nip of coconut-broth or even reduced fish-fond @ lach119435..and: don´t forget to add (as chef jean-pierre says) a"littil bit of "parsily"!

  • Now that looks good, Thanks Jean Pierre, i love all your recipes!

  • sorry; as not to bother anyone, it is "cilantro" or "coriander" both are the same tough. :)

  • cilantro is the leaf, coriander is the seed.

  • hehe kinda scares me to think how much that would actually cost though ^^

  • what is pasteli or selentro ??

  • its cilentro not selentro, or coriander..

  • Parsley and cilantro

  • what are other stuff that i can use instead of vermouth?

  • you can use another good white wine

  • Sorry, let me rephrase my question, what oter stuff that i can use instead of booze? hehe

  • you can use a good home-made fish Broth...

  • Oh I see, Ive been waiting for this answer for so long! Anyway thanks a lot!!

  • Just curious: why wouldn't you want to use wine as part of the sauce? It isn't going to get you drunk.

  • He does add Vermouth, which is a fortified wine.

  • I was directing my comment toward the posters here asking for a non-alcoholic recipe.

  • in any Alcoholic Beverage(Beer, Wine, Rum, Tequila etc...), the alcohol will evaporate with the heat of cooking, leaving behind all the good stuff. even kids can eat it... ;)

  • You are a master at pointing out the obvious.

  • Well, almost all of the alcohol evaporates, it takes a few hours to cook it out completely. 'Twill be safe for the kidders, though

  • That looks wonderful but three wouldnt do it for me ehehe. God I love shrimp (prawns) 5*'s ~HiGH HeaD JeSTeR~

  • tried it....absolutely delicious Great great recipe! Thank you

  • a little bit of white what?

  • white vermouth
