  • nice recipe but i would add more basil leaves and at least 4 garlic cloves... garlic is never too much...

    i have another tip... add a little dried chili pepper to give it a kick

  • Simple and nice. However: Too little salt is added the pasta water (they will taste bland with only a pinch of salt.). A tablespoon would seem right.

    As for sugar, it is not true that Italian chefs don't add sugar to their sugo al pomodoro; I know many Italian chefs who do it all the time. As others have stated: it all depends on the sweetness/acidity of the tomatos.

  • Hello, I loved you recipe; but I'm kind of curious, you said sugar should never be poured to the sauce, but sometimes tomatoes get very acidic and that's why sugar is added, what do you recommend me to not pour sugar and avoid acidity at the same time?

  • @killingracists Hello! Well in this case, if tomatoes are acidic( the good tomatoes aren't acidic) you need to add a half spoon of sugar in the tomatoes sauce.

  • hey everyone, here is a tip from a man born and raised in Rome. If you can find tomatoes from San Marzano, they are the best. Either that or Pomi, trust me you wont be sorry.

    Most people in Italy don't bother using fresh tomatoes to make the sauce, they just use passata or canned tomatoes. At least, when i was living there that's what they did.

    There is a whole aisle in the supermarket for pasta and passata!

  • it's passato di pomodoro, which is not canned, its just strained tomatoes ready to cook. Lots of people use it, so does my nonna sometimes :)

  • but she didn't use any fresh tomatoes..and that was clearly in a bottle..sauce should not take 10 minutes..it should cook for a while, and there was really no point to this video..she basically heated up a can of sauce, which anyone reading directions can do when buying it

  • People in canada add sugar to the sauce because the only tomatoes here are SO BITTER!! Im from the USA and used to have wonderful tomatoes to use. but now i cant even make sauce unless i get some good tomatoes imported. I miss good pasta sauce!

  • Hi, mi mother is italian, we live in Venezuela. She adds diced onion to the oil aside the garlic and she also leave the sause coocking for the entire morning

    Overall, I would say that most people in Italy do not eat fresh pasta and fresh tomato sauce everyday. Actually, you typically make tomato sauce only in the summer, when San Marzano tomatoes are ripe (this video was shot in winter-time). I know that in the US fresh tomatoes are available all year around, but in Italy we only use the freshest tomatoes.
