  • I AM NOT SURE WHY YOU DID NOT BLEND YOUR FRUITS IN WINE OR RUM, YOU DID NOT USE BROWNING TO GIVE YOUR CAKE THAT DARK LOOK. BUT IT LOOKS GOOD, NOT SURE ABOUT THE TASTE.

  • My Mother made Fruitcake and I loved it, it was dark and moist she also would pour rum over it and wrap it in saran and foil and let it set for days or freeze it . Wonderful with a cup of coffee, lots of dried or canndied fruits and fresh shelled nuts, the rum really makes it.

  • Hi - the paper in the tin is greaseproof paper used as double thickness. You can buy packets of dried mixed fruits in the shops or you can make your own (currants, sultanas and raisins). The peel is generally found in little tubs in the store - if you buy a packet of mixed fruit, peel is often found in there as well!

  • Hi, this was good, very precise without being overly long. BTW, what was that paper in the tin and when do you remove it? Also the dried mix fruit do they sell that like that in the store or do you dry and mix your own (if so which fruits?), and what was the peel (do you just buy that in the store too?). Thanks!

  • Hi - the cake is not burnt - it is a dark brown cake anyway and the dark pieces are fruit.

  • Hi - you could use chopped nuts if you prefer. You would not need to freeze the cake - wrap it in clingfilm and put in an airtight tin until you need it. Freezing can tend to dry the cake out. Wrapped in an airtight tin, the cake should last several months. You could take it out every so often if you wish and add a little more rum, then wrap it up again and put back in the tin. It should be perfect for the Christmas holidays!

  • Wow. This looks good. Why the ground almonds? What does it do as opposed to chopped nuts in the batter? Also, after you drizzle the run onto the cake and allow it to sit for a day, could you then freeze the cake? I would like to make it now in preparation for the christmas holidays.
