no, they're just a simple step-up transformer. It's AC. All they do is increase the voltage. Microwave ovens do use a rectifier and capacitor to convert it to DC and double the voltage for the magnetron, but the transformer itself is just high voltage AC.

You could use an inductivity instead of lightbulbs.
Like the ones for fluorescent tubes. For more current you can simply put serveral in parallel. I used that before to current limit a microwave transformer and it worked fine.

Yeah, that's a fan I have to keep the light bulb cool. (I use the light bulb to limit current and prevent overloading the transformers.)
