Yes, folks worked much harder then, often from dawn to dusk. They needed extra energy. Also, God created animals for our use. Not saying we mustn't be kind to them, we must. But, some were made to be eaten, just the way of it.
@Cabronosidad You have to consider that these dishes were from a time without cars being owned by everyone, no central heating, no couch potato lifestyles or sedentary jobs - all of these fats were needed by people just to keep going......
@Cabronosidad Actually butter and lard is healthy. It's the carbohydrates that are unhealthy. Butter lard and saturated fats do not cause heart disease.
@jlauralee All saturated fats contribute to increased cholesterol, which is probably not a good thing. It tastes great though ... all things in moderation.

As for convincing evidence regarding saturated fat raising cholesterol, I think you'll be hard pressed to find many physicians that are not convinced. Don't get me wrong, Stephan G. is a bright fella, but he also has 'man with a hammer' syndrome. ;o)

What is the TRUE source of information fed to us through the media, the government, and doctors about health? Thanks to the internet, we are able to read medical studies for ourselves and do our own research. One good book I read was Gary Taubes "Why We Get Fat."
@jlauralee All the physicians of my acquaintance work hard to keep up with current publication in science journals (Internet research is notoriously unreliable) and other respected sources of expertise. Take care.

Go eat some grass clippings from your yard and keep your self-righteous indignation to yourself. No one watching a video about cooking meat is in any way interested about hearing the pitiful cries of some squeamish vegetarian.

@jazmella I'm surprised that anyone finds this disgusting. It's simply someone preparing a meal using meat like many people in the world do every day. In the UK we have become unused to seeing meat still on the animal to stop our squeamishness. Would you have been as revolted if the film was about making chicken pies, or is it just because it's a once-cute bunny that gets the chop? Great film, by the way!
This really is the finest of good simple and nourishing English cooking.
We would all be a lot healthier if we went back to proper preperation and cooking of food.
We were brought up on Rabbit parcels which one got at the market for a few shillings
Rabbit is a very good low fat meat.
