No. When you switch captaiins, the first captain won't stop instantly; you need to let that remaining bit of momentum carry the captain into the spray.
Alternatively, you can get close to a spray, switch captains, then use the second captain to push the first into the spray; the first will start drinking it as soon as he touches it.
It varies. Above ground, it generally depends on how long the segment is; this probably took at least 25 hours of attempts to finish. Cave floors usually depend on how large the floor is and how many treasures there are; usually they only take a few hours, but if there's a lot of treasures and a large floor, it can take a lot longer. (luckily every floor remaining has two treasures or less, excluding the Titan Dweevil)

No, the thing in the water was only a drain. Every level has a drain, but only one of them conceals a cave, and that one is in the Perplexing Pool.
