  • You said 1 teaspoon for people who prefer milder taste right? I was looking at the uploader comments but it sounds really small compared to 1/3 cup. I like mild-medium in terms of spicy. How much would you recommend please. (:

  • her accent is SO cute

aaaand I need to make kimchi xD

  • searched the whole kitchen and we had everything other than hot pepper flakes!! is there something else that can be used? like crushed chili flakes or paprika or something?

oh, i meant mixed chili powder, does that work?

  • @Marih94 We have talked about this topic on the forum. Please type out "Chili powder versus Red Pepper Powder or flakes" in search box on my website, then it will lead you to the discussion. ChefKibby left a good tip for those who can't find Korean hot pepper flakes in their area.

  • @Maangchi hehe, thank you for replying, i actually read it after i posted the comment. i love to watch the food that you're making! fighting!

  • @Marih94 oh yeah? cool!

  • now try to find fich souce in mexico XD i live in mexico and it is very difficult to find fish sauce XD

  • I'd have thought that was more like kimchi salad since the flavours will not have permeated. Looks good though. Personally if i make it, i will use a dash of pepper flakes. lol

  • Can I substitute Worchestershire sauce (which has anchovies in it) for the fish sauce? Will it taste about the same?

  • Is this very spicy? 'cause I can only eat food that it's very mild in terms of spiciness and I always wanted to try kimchi but I'm afraid I won't be able to enjoy it if it's very spicy.

  • @LeonLeeLum You can adjust the amount of hot pepper flakes to your taste. Start with 1 ts first. : )

  • @Maangchi So I have to follow this recipe and instead of the 1/3 cup I put only one teaspoon of hot pepper flakes? I'm wondering if it's going to taste good like this :(

  • THANK YOU!!!! I live in Barbados where there is no hope of finding kimchi or napa cabbage, until I found this recipe!!! I will never be without kimchi ever again!!!!

  • @nchen7 wow, awesome!

  • Mmmm Corona <3

    Thanks for great recipe :)

  • @KristinMercier cheers! : )

  • I like watching your videos.. But i have a question... I dont like spicy food but i want to try kimchi, what ingridients will i use?

  • I have always thought Kimchi looked amazing and probably tasted so too. Now will make some to see for myself. Can this be stored in the fridge for a few days? Thanks for sharing your delicious looking recipe,

  • @KissHope oh you are going to make kimchi for the first time! Wonderful! Check out the written recipe, tips, and the photos on my website please.

  • oh poo!!!! I got all excited to make this today! But I got Chili Powder instead oh no!!!! I got red pepper flakes also but again I goofed and got chili powder instead of red pepper powder! Now I have to wait till next Saturday and try this all over again!!!! arghhhhh

  • how long does this kimchi last?

  • @TensaiHimeSama

leave it for a weak and it will become even better

all the healthy bacteria from the cabbage can live up and celebrate a party with the sugars

the juices become acidic and slightly alcoholic

u could fake this process of acidation by adding some vinegar but thats not what fermentation is all about

i skipped the fish sauce part because i hate fishsauce

i added more salt and didnt rinse it that well and added some soysauce instead of fishsauce because i like experiments *yum*yum

  • i love the corona at 2:16!! cheers! :D

  • Hot pepper flakes? It looks like you used a powder, not hot pepper flakes.

Is this the same as chili powder or something else. Can you be more specific please.

  • @EclecticDiscus yes, check out the photo of hot pepper flakes in the ingredient section on my website please.

  • @Maangchi

Thank you! i found it, Red Pepper Powder made from ground flakes it looks like.

  • @EclecticDiscus yay!

  • I live this video! Not only is it hilariousness that there could be a Kim Chi emergency! I can't think of any other people so obsessed with a single food item. Maybe chinese people running out of tea, but that simply wouldn't happen! lol. Maybe french people running out of butter... but they would just use duck fat!

In an emergency, wouldn't it be faster to buy Kim Chi.... Don't most Koreans just buy it?

  • @no2religions Making kimchi is easier for me than looking for a Korean grocery store in another country. Besides homemade kimchi is the best. I'm glad you enjoyed watching this video. If you like to talk more, please visit the forum on my website. Leave your thoughts there. : )

  • Can you make this WITHOUT the fish sauce I am allergic to any kind of fish/fish sauce/fish paste

  • Why we should use apple vinegar or wine vinegar, rather than our rich vinegar? And what is made for fish sauce? Why Vietnamese and Koreans all love it, while we seldom eat this sauce?

  • Thank you for this recipe! I've never tried kimchi before but I love Korean food so I decided to try this. I followed your directions but I'm not sure I made it right, it just tastes like spicy cabbage, there's not much other flavor.

  • @monkehm Did you use fish sauce and garlic? Check out the recipe on my website please.

  • @Maangchi I made it just like your recipe says. It tastes much better now that I've let it sit overnight. I used it to make your delicious kimchi pancakes today. Thanks!

  • @monkehm Great! Thank you for your update!

  • Thank you sooo much! Ever since I left Korea I've craved Kimchi but didn't like the taste in the nearby restaurant. This way is much fresher, faster, and even Americans can make it at home. Have you made a video on Kimchi Jigae or Spicy Cabbage Soup? I'd like to use the left over Kimchi for this.

  • @nelressa yes, check out my kimchi stew recipe on my website.

  • You make me so hungry. 0_____0

I am definitely going to try to make this <3

  • My porridge mixture is thicker and stickier looking than yours looks. Is that alright?

  • you are so sweet :)

  • did you like being in mexico ;D?

  • @kareennnnn yeah I miss Mexico! : )

  • can u just use napa cabbage if u have it?

  • @hannah0782 of course! ; )

  • where are you ?

  • How long does this kimchi lasts?

  • @nyappyLanD it takes a VERY long time for kimchi to go bad, especially if you refrigerate it. Kimchi can last for months and months and months.

  • emergency .. so funny xD

  • did i need to put the prepared kimchi straight into the fridge right away or just leave it fermented outside at room temperature for a few days?

  • Maagchi I have one question. Can i just Skip the Fish sauce? (I'm a vegitarian)

  • @TheOdddellarobia yes, you can use soy sauce instead.

  • @Maangchi Ok, Thanks! Btw You are a great cooker!!!

  • hii ;p instead of using fish sauce, can i use oyster sauce?

  • @drainilliyana oyster sauce is not used in kimchi. Use soy sauce.

  • I love how you can consider no kimchi to be an emergency. Too funny and cute!

  • @CraftyKoo great! : )

  • Ive spent years in Seoul- this is a real kick for those kimchee addicts (like me) who travel and need to spin up some smelly goodness.

  • I just did your recipe but I am not sure if it has correct taste, i used onion instead green onion, may be that change the flavor, Im very confuse... Can you help me?

  • @lea22308 onion will enhance the taste. I am sure it will be delicious!

  • Im in mexico, and want to try the recipe, but im wondering if i can use local chili powder, "chile piquin" for the recipe.

  • I like the title - "Emergency Kimchi"

  • i really love you videos.. i tried your recipe and i loved the outcome.. thanks.. indeed, it is an emergency kimchi but the taste doesnt show that it's emergency-made.. kkkkkkkkkkk.......

  • @tintinpurplish77 great!

  • This is like your 3 kimchi video and if you are making it on vacation then you are a die-hard lover of it.

  • I LOVE this recipe! It is absolutely wonderful. I just made some for the first time. Unfortunately (or fortunately) I mistakenly used chilli powder instead of chilli flakes. It is SOOOOOO HOT! But it is SOOOOO GOOD!

  • @ssgmasoner haha fortunately or unfortunately!

  • Anyway, I sure love watching all your videos!! I never knew about kimchi until you made your first kimchi video. I can't stop eating it now!!

  • @Wivanunu Great! Cheers!

  • The sky at the beginning is a chemtrail/chemcloud sky.....nobody is spared!

  • my fren ask me to make kimchi, and she's vegetarian.. What should i replace the fish sauce..?

  • @NazeeraSHINee94 Use soy sauce or make vegetarian version fish sauce. Vegetarian fish sauce sounds strange but my vegetarian readers make their own version fish sauce when they make their kimchi. If you want to read their recipe, type in "vegetarian fish sauce" in search box on my website.

Basically they boil water and shiitake mushrooms, dried kelp, onion, radish for a long time and add salt to make it salty.

  • What are you doing in my beloved México?

  • lol wish I had this video two years ago, was constantly rushing home from work or class to do the kimchi, or rushing out half-finished. I never could figure out on my own how to whip it up, my friend showed me once but as the vid shows, it's all in the handling and having the system for the vegetable base and the rest of the ingredients. thank you 100 times for posting this!

  • You are too cute, and you are hella good with a knife...

  • hallo Maangchi, this week i tried this recipe and i must tell you, it tast so good. Thank you for your videos, i will try more of your recipes. ;-)

  • @Floridaboy1901 yay, awesome news!

  • Maangchi this is like localized Mexican Kimchi! ;D

  • I've made kimchi several times thanks to you. It's been delish every time. The oriental store that I use never has the same brand of red pepper flakes so I'm always having to use a different brand. This time the brand I got was VERY hot. I like hot food but I'm talking so hot I don't know that I can eat it. I made another batch of kimchi without any red pepper flakes and mixed it together to try to dilute the heat. Do you have any other suggestions on what to do with kimchi that is so hot?

  • 3.48 what's the song??

  • @maangchi First try at kimchi here. Salting squid now for real "character" in planned big batch:)

I've tried a dozen of your recipes in the past week and they all came out exceptionally well. My hard-earned knife skills, while not so good a yours, really make learning Korean cooking from you so easy and fun. My new healthy hobby!

    Thanks!

P.S. Went to Korean Mart on 32nd and got anchovy holder thing for stock and some mugwort powder, lol

  • @piperjohn3 wow wow! It sounds like you love cooking! Cheers!

  • Made this last night before I try full recipe this weekend. Used half napa and half regular NYC cabbage. Amazed how well it came out. Very fresh taste but still real kimchi character. Waiting for it to get funky, now :)

    Maangchi, u rock.

  • @piperjohn3 wow good news! I'm happy for you! Still real kimchi character? haha,

  • first time making kimchi, and emergency kimchi ^^ and then added a bit sesame oil. It was delicious!

  • one of my relatives live in Korea and they brought back some kimchi and it was amazing! love Korean Food! :)

  • If you ever have the chance, visit Cancun if you haven't already. You would love it :)

  • I'm just wondering does this taste as good as the normal Kimchi? My boyfriend is Korean and I have been learning to cook Korean food (with your help alot :D) but the regular Kimchi seems to be too complicated here and it's so expensive to keep buying it cause it run out so quickly. He eats like 3kg Kimchi in 1.5 month >"< Thanks

  • love your videos!!!

  • Can I use chilli powder instead of pepper since I can't find it anywhere?

  • Super I like this one .. only thing .. What happen if I don't find Fish sauce .. :(( .. is the only thing missing now ...

  • because im allergic to the chives that korean's use for their kimchi what else can i use instead.

  • @chrisisawseomo Use green onions or leek.

  • it must have been hard being away with your own kitchen knife to cook...

  • i love eating this just as kimchi cabbage salad ! So healthy and full of anti - cancer properties /

  • I'm curious. Who films your videos? =))

  • @vanillaica My family filmed this video. Thank you!

  • hi there how long this kimchi can be kept for?

  • This looks sooooo yummy! I was just curious, though; you were in Mexico - did you get sick, since the water there is not potable and the veggies were not soaked in a parasite-killing solution??? Or does the fermentation process take care of that???

  • @anginestra02 I bought bottled water to drink but I used their water for cooking. No problem.

  • @anginestra02

The amount of salt used will kill most bacteria in a short order, the fermentation process will kill even more. In the past people had to deal with untreated water, and pickling process usually allowed long term storage and use without refrigeration.

  • @anginestra02 Besides, the water isnt that bad anymore, thats an old stereotype from the fifties...

who am I kidding?, the water was terrible in most of the country until well into the nineties :P

    still, its clean now :D

  • Looks delicious! :)

  • Can I put in kimchi liquid/juice in kimchi sauce making, especially the emergency kimchi, as a strarter? How much?

In place of sugar, how many cups of liquid-based sweeteners like honey, maple syrup, agave or etc. should I put?

  • WOOOOOOOOOOOOOOW!!! BIENVENIDA A MEXICO!!

  • What does kimchi tastes like? I've heard many great reviews about it, but I never tasted it before!

  • Maangchi, I think I'm in love...are you married? ;)

  • I made it! It was good except i put too much salt! next time, im going to put less salt and fish sauce. :)

  • @maangchi ?which ingredient is vital to make the kimchi ferment?

  • @MsKitler Kimchi juice or liquid. It is the ultimate kimchi starter.

  • I notice you use a lot of sesame seeds in your dishes. Is that a common element of Korean food or is that just something you like? If it is common to Korean food I'm excited because I really love sesame.

  • I've tried your regular kimchi recipe. It's delicious! Some of the best kimchi I've ever tasted. Does this kimchi taste as good to you?

  • Can you please do a video on how to make Soybean paste? I live in India where Asian food (except chinese) isn't very famous and nothing is available here. really appreciate it.

  • Unni...I think it's wonderful that even on vacation you are cooking what you love. I also love that you go to the local markets to select your own ingredients!

  • What if I dont find a fish sauce?

  • I just finished making this and the smell is soooooo strong!! i washed my hands sooooo many times it won't go off!! XDDDD

  • @MistyAlMehairi It sounds like you made good kimchi! : )

  • @ilusuens yes, you can use either one. Check out the photo on my website.

  • Oh cool u went to oaxaca mexico im from there :)

  • Hi, I love ur cooking and especially the kimchi,

but my family and I don't like the taste of fish sause,

what other replacement can I use?

balsamic vineger or white vineger, or something else?

  • @TheQueenKoKo yes, then use soy sauce instead of fish sauce. Good luck!

  • When have you been in mexico? Will you come back soon? I´m waiting for you in Acapulco with arms wide open. I´m looking forwards to cook with you!

  • Emergency haha It's so funny expression

  • I love you! In my town in impossible to find most of ingredients to make traditional kimchi! :) I'm trying this for sure

  • @LadyArlequina I'm happy for you! It's very easy to make!

  • First off you are just adorable! First time making Kimchi and it turned out great. Made recipe exactly as shown, only change was using Nappa Cabbage. I'm going to make the Kimchi recipe that includes the sweet rice flour another day. Thank you Maangchi!

  • @rline66 Great! Let me know how your kimchi turns out.

  • oh my god, WAY TOO SPICY FOR ME!!!! I think I will add a bunch of cabbage to the mix today - I made it last night, its delicious but I can't stand it cause its too spicy. ps - I added cooked shrimp to it cause i am having a big craving for shrimp.

  • can we add more hot pepper flakes?

  • @nubcakesssx3 yes, you can.

  • can you use oyster sauce, instead of fish sauce?

  • @alogli no, oyster sauce is different from fish sauce. Use fish sauce or skip it if it's not available.

  • @Maangchi okay thanks, but doesn't oyster sauce contain fishsauce aswell?

  • Kimchi is the best side dish in the world thank you Korea.

  • You are so cute! And I love your videos!! Kimchee is one of my most favorite foods. My husband says it is smelly but my daughter and I go crazy for it. Thank you for this video!

  • do you have to use fish sauce??

  • is it okey if i let the cabbage soak with salt above 10 minutes??

  • @crazybabes1991 yes it would be okay :) an original kimchi we soak the cabbage for 2-4 hrs! but this is emergency kimchi so it's fine that way

  • I think its so awesome , the respect you showed to your neighbors, looks like we could learn more from you than Kim Chi :)

  • @saphopoem you are talking about my mosquito voice in the video? : )

  • @Maangchi Yes and wonderful sense of humor as well, love your videos :)

  • @saphopoem haha thanks a lot! Happy cooking!

  • Can i use lettuce instead of cabbage?

  • @TheMymys lettuce isn't usually fit for kimchi, cabbage is more thick and crisp which is more preferred. haha.. i have never made it with lettuce before so i wouldn't know if it would turn out well.

  • lol..imagine sb drinks that fish sauce thinking its coke xD

  • this is the same cabbage that we germans use for our sauerkraut. By the way making Kimchi and making sauerkraut is very simular.

  • onion kimchi's good for emergency wouldn't it?

  • I think that is 양배추

  • Does Korea has Kimchi made of Pak Choi, Choi Shum and other vegetables other than cabbrage?

  • Maangchi I love how you use a tiny kitchen space so efficiently!

  • Hpw long dpes emergency kimchi keep in the refrigerator?

  • @TheBaconEggAndCheese Until it runs out. It will ferment in the fridge.

  • I made kimchi and it turned out very spicy. My uncle loves it. I tried it with sesame seeds and it was amazing!

  • I used a nappa cabbage and gocujang paste and it came out like real kimchi !

  • loving the corona on the side lol =]

  • I would hate to be that cabbage o-o....that knife is huge.

  • Hi,

I was just wondering if I could make the kimchi without using fish sauce or sugar.

    Nice video!

  • @asylumzero: then add more salt instead of fish sauce, and add more pear + apple instead of sugar. But it deffinitely changes the flavor.

  • i am just wondering does this taste like ordinary kimchi??

  • @maangchi i read all the comments and the recipee too and it helped me ^^

    thanks <3

  • hey maangchi i have an question.

today i made kimchi woth an ordinary cabbage(i think the weight was 2.9-3.5 pounds) and on that mass i used about 80 grams of hot chilli powder.i tasted kimchi and for me it was to spicy-hot.

for next time how much hot chilli powder should i use?

  • @markony94 Hi, check my "easy kimchi" recipe on YouTube or my website. I posted exact measurements there.

  • only koreans would have emergency kimchi

  • @Maangchi can you replace the hot pepper flakes with hot pepper paste?

  • Hot pepper flakes- is it the same with chili powder? Or not...?
