@NazeeraSHINee94 Use soy sauce or make vegetarian version fish sauce. Vegetarian fish sauce sounds strange but my vegetarian readers make their own version fish sauce when they make their kimchi. If you want to read their recipe, type in "vegetarian fish sauce" in search box on my website.
Basically they boil water and shiitake mushrooms, dried kelp, onion, radish for a long time and add salt to make it salty.

I've made kimchi several times thanks to you. It's been delish every time. The oriental store that I use never has the same brand of red pepper flakes so I'm always having to use a different brand. This time the brand I got was VERY hot. I like hot food but I'm talking so hot I don't know that I can eat it. I made another batch of kimchi without any red pepper flakes and mixed it together to try to dilute the heat. Do you have any other suggestions on what to do with kimchi that is so hot?

Made this last night before I try full recipe this weekend. Used half napa and half regular NYC cabbage. Amazed how well it came out. Very fresh taste but still real kimchi character. Waiting for it to get funky, now :)

This looks sooooo yummy! I was just curious, though; you were in Mexico - did you get sick, since the water there is not potable and the veggies were not soaked in a parasite-killing solution??? Or does the fermentation process take care of that???
The amount of salt used will kill most bacteria in a short order, the fermentation process will kill even more. In the past people had to deal with untreated water, and pickling process usually allowed long term storage and use without refrigeration.
I notice you use a lot of sesame seeds in your dishes. Is that a common element of Korean food or is that just something you like? If it is common to Korean food I'm excited because I really love sesame.

@TheMymys lettuce isn't usually fit for kimchi, cabbage is more thick and crisp which is more preferred. haha.. i have never made it with lettuce before so i wouldn't know if it would turn out well.
today i made kimchi woth an ordinary cabbage(i think the weight was 2.9-3.5 pounds) and on that mass i used about 80 grams of hot chilli powder.i tasted kimchi and for me it was to spicy-hot.

all the healthy bacteria from the cabbage can live up and celebrate a party with the sugars
the juices become acidic and slightly alcoholic
u could fake this process of acidation by adding some vinegar but thats not what fermentation is all about
i skipped the fish sauce part because i hate fishsauce
i added more salt and didnt rinse it that well and added some soysauce instead of fishsauce because i like experiments *yum*yum

First off you are just adorable! First time making Kimchi and it turned out great. Made recipe exactly as shown, only change was using Nappa Cabbage. I'm going to make the Kimchi recipe that includes the sweet rice flour another day. Thank you Maangchi!

oh my god, WAY TOO SPICY FOR ME!!!! I think I will add a bunch of cabbage to the mix today - I made it last night, its delicious but I can't stand it cause its too spicy. ps - I added cooked shrimp to it cause i am having a big craving for shrimp.

@crazybabes1991 yes it would be okay :) an original kimchi we soak the cabbage for 2-4 hrs! but this is emergency kimchi so it's fine that way

@TheMymys lettuce isn't usually fit for kimchi, cabbage is more thick and crisp which is more preferred. haha.. i have never made it with lettuce before so i wouldn't know if it would turn out well.

this is the same cabbage that we germans use for our sauerkraut. By the way making Kimchi and making sauerkraut is very simular.

@asylumzero: then add more salt instead of fish sauce, and add more pear + apple instead of sugar. But it deffinitely changes the flavor.

hey maangchi i have an question.
today i made kimchi woth an ordinary cabbage(i think the weight was 2.9-3.5 pounds) and on that mass i used about 80 grams of hot chilli powder.i tasted kimchi and for me it was to spicy-hot.
for next time how much hot chilli powder should i use?
