no even gonna trim the fillets up? it easy to just take the fillet off and ribs but trimming and making it look nice is the hard part, with a sharp knife i can fillet around 4 salmon a minute(without trim) not that difficult
trim what off? I think you'ld be surprised how cleanly these 3 or 4 regular fish cleaning guys can take the fillet off in just few passes of the knife. no fins, no ribs, all straight cuts, no jagged edges. Only the pin bones and skin remain.
well, these are salmon in the video here and they all have a full row of pin bones along 1/2 the fillet. There's no quick way around it as far as i know without cutting a trench around the bones.

When I was filleting fish there was no such thing as youtube etc, However I can tell you I won the annual fish filleting contest in Peterhead, where yield, speed, and presentation was all taking into consideration. Keep on practicing;))

Also his yield looks poor even though he is leaving half the belly, and bottom fins on. You would need to go a long way to find a better filleter than someone from Peterhead Scotland. good speed and good yield. I was always told 'never put a fillet down the line that you would not put on your own plate' I doubt that 'fish ripper' would eat that fillet.

i fillet haddock at my plant no bone grade A fillets 5 or 6 a min if they were bad i wouldnt have a job
i cut upwards of 2000 lbs of fillets a day no bone grade A

no pin bones in our fillets boneless cut somtimes we leave pin bone in but haddock only have 4 pin bones
