I am so eager what really you learn in culinary school since my culinary school was my mother's kitchen and later after marriage, my in-low's kichen but never really did any study regarding food. When I am done with my kid's responsibility, I am looking forward to do something in food industry. Interesting condiment. I would definitely take out the seeds though, the bitter flavor of the seeds really ruins the lemon flavor in any lemon food product that I have tried.
Yes, I always try my best to take out seeds since once you make pickle, seeds even changes color to red and very hard to find while you eating. So always serve pickle seperately. Never use directly with any food. So that if there are any seeds left, it can be removed.Enjoy!
