I've never made chili until today, used more veggies than you did. Took a preference to actual spices and chilli's over pre-mix chili stuff (can't find that where I am). Mostly oregano, birdseye chillis with some dried chilli (bit sweeter). Some beef stock, sea salt, cracked black pepper and random other stuff.
I'm happy with chili being plenty of veggies (mostly capsicum and onion) however it looked ok in this vid, not award winning though.
hey Chef, go to some of those world famous Chili cookoff competions and you will find out that they, the '' management '' DOES NOT ALLOW BEANS IN THE CHILI DISHES to be judged! In fact, it will disqualify anyone that does use beans, because Authentic Mexican Chili HAS NO BEANS!!! BEANS are a side dish, but NEVER added to the Chili!
Real Authentic Mexican Chili has NO Beans or Celery !!! Only Meat, Sause, Chili Peppers, such as Serranos, Jalapenos, Poplanos, etc; ! Go to Mexico and learn how to make REAL Southwest Style Chili !!!
Let me tell you a secret that I found out by experimenting with my own chili recipe. Add one can of V8, can be the spicy one or the normal doesn't matter, it really takes the flavors to the next level. Personally, I would never add celery itself, but the celery flavors from the v8 are awesome. I also cook my meat really high and fast, de-glaze with onions, garlic, and dash of water, then add all back together. I can't tell you all the steps or ingredients cause its a secret.

I'm sure its good chili but,,,,your no chef just telling from the beginning with the chopping of the onion. What the hell was that ?????

Good! Have you tried to add red wine instead of water? Just a cup,I also use vermouth with chicken or rabbit, more sweete and fragrant.
