when i'm cooking roo.. i smash it and tenderise it with the back of my clever for a bit and let it sit overnight in a marinade made from indonesian sweet soy, chilli flakes, worchester sauce, thai sweet chilli, crished black pepper and lemon juice or apple cider vinegar.. fry or grill on roaring heat fast.. and serve with rice and asian veg...possum also works with the marinade ...kinda like beef in black bean but with the roo flavours kicking through ..yum!!
