Yes you can, gaming won't stress the device more, because to it, its all just a bunch of pixels, graphics quality won't affect it.

I am buying a new PC soon (building), I don't have the need or the money for dual monitors though. But if I did, i'd probably use this.

it's probably not ideal for gaming since it's not a high-powered GPU. You could play games on your main screen and use this for you chat or iTunes though.

USB2.0 has plenty of bandwidth to support video. I've watched 720p videos on a 1680x1050 LCD, using the EVGA adapter, so I don't know how much more you need!!

Nice! and its pretty low power running off a USB 2.0 Slot, and 1600x1200 max resolution with 32bit Colors is pretty impressive...
