I just got a mother that I had ordered and after reading the instructions realized there is no way it will be warm enough in my house during the winter months to brew any tea. I'm hoping I can just freeze it for about 4 months.
I believe you can dry them at very low temps in a dehydrator like jerky as well, and just start brewing tea when you start using it again. The dehydrated ones keep indefinitely I think, but I wouldn't want to use it after a year (just dehydrate a new one every 6 months). It would take about 30 days, and when you brew your first batch, you would use apple cider vinegar I think, then go from there....
