Actually, the main boss is carlito. You have to fight him like 5 times. And also, thats a very early version of the game. A lot of things are different in that vid than in the game.

ya i did alittle more looking into the game and the very last boss u fight is this pyhcopath with a tank in overtime mode which is the ending up of the game and ya most of the video was like E3 clips the earlier stuff
