  • Effing pro kneading!

  • Honduran folks, use butter, or oil. Sometimes we'll put milk instead of water, and sometimes we'll use coconut milk too. My mother, flattens the tortilla in her hands, by slapping it back and forth. I'm still trying to develop the technique.

  • Im making tortillas for Years now, NEVER used vegetable shorting nor lard whatever, just flour + salt + olive oil + warm water, and they turn out PERFECT !

  • That's a good recipe. Although... For this recipe to turn out as real flour tortillas (instead of flatbread) tortillas need to be a lot thiner. And for that to happen they have to pressed/rolled at least 2 times and let rest under a slightly greased cooking cloth (thin, not fuzzy)

  • i tried this today to go along with the curry i made. but it didn't turn out right :( when i put the flattened dough into the pan, it didn't rise and inflate at all. what am i doing wrong?

  • @RiDKiculous Your using to much flour (to dry). When kneeding your dough stop adding flour when it still sticks a little to the kneeding surface but is workable and developes a skin. Your tortillas will come out soft and chewey.  Cook on low heat. You don't want tortillas to inflate.

  • @mancillado Roll out in three seperate sessions with 20 minute rest periods between each session to combat shrinkage. Keep dough covered with towel when resting.

  • Hi I sew you recipe and I am confused, you said 8 oz or 1 3/4 cup. but 8oz is a 1 cup and 13/4 is 14 oz. .

  • my family uses lard (morrell snow cap lard, i know sounds bad but its better )and no baking powder the dough is softer :) i've noticed if you use oil it turns out like store bought tortillas X( try it out :) same technique.

  • @clairecho22 while pita bread might be in the same family of flat breads (in that none contain yeast) tortillas are different from pita bread. Pita bread and tortillas both compliment different foods, but if you'd like to try replacing the pita bread in a sandwich recipe, in favor of tortillas, I can't imagine that it would be a negative outcome (again, depending on the fillings).

  • My family uses coconut oil instead of shortening ( or the real way, lard.) It's a healthier oil that makes it crisper and taste better.  You can find coconut oil at walmart.

  • tortillas made with half masa harina and half flour are a much nicer texture than all flour tortillas. i ahve found all flour tortillas never stay soft enough and dont roll very nicely for burritos. try half flour and half masa harina. they stay lovely and soft. best i have tried for burritos

  • @foodwishes Made this today with 2 green asparagus and a sjalot finely sliced. Baked it in a bit of olive oil, scrambled an egg with it. Seasoned it with salt, pepper and some Tabasco and fold the mixture in the warm tortilla......fantastic, a perfect lunch!

  • Addition to recipe(1):

    The cook can roll hither and thither over the pancake without pressing the normal size clean glass jar with a straight wall. The presence of the two glass banks for this procedure is a good variant i think.

    Addition to recipe(2):

    Before thermal process the cook can apply the scissors for creating forms of the pancakes, if the cook wants to receive the more handsome pancakes. This procedure requires the scissors, flour and ideas.

  • @lupusk9 that's like a texas-style tortilla which you can make the same way but with oil instead of shortening and warm milk instead of warm water.

  • @lupusk9 To make them thinner after pressing with a tortilla press, let the flattened dough rest for 20-30 minutes covered with a towel. Then affix a sheet of saran wrap to a flat surface so that it is secure and won't move. Spray saran wrap with cooking oil. Place flattened dough on saran wrap then press, pull, and stretch it out with the tips of your fingers while shaping into a circle. I stretch my dough out until it is translucent.

  • Ah so cool! Pretty similar to Tanzanian style chapatis I've seen made except minus a step where you twist the dough into spirals before frying to make it more layered...and, yeah minus all the frying oil. lol

  • my grandma would use boiling water and she would form the dough balls so they kind of looked like little pie crust before she would roll them out, I think she also used more lard, and hers came out super buttery and soft they kinda melted in your mouth

  • If you own a tortilla press...i'm pretty sure you've made tortillas before <.< just saying lol ...they really are good and you have to have to add the fat! thats the only way to make them come out nice and chewy

  • If you're having trouble with your tortillas getting hard and crispy too fast, first make sure you are not over cooking them or using too high heat and second pop them in a zip top bag while they are still slightly warm. The steam that gets trapped in the bag will very gently rehydrate the bread, making it soft again.

    8 ounces all-purpose flour (about 1 3/4 cup), more as needed

    3/4 tsp salt

    1/4 tsp baking powder

    1/4 cup vegetable shortening

    1/2 cup hot water (about 105 degrees F.)

    Seriously though, this looks fantastic and I can't wait to make some.

  • the recipe was good!.. some people need measurements (especially important when you are SHOWING/EXPLAINING to someone how to do something) but with practice as Chef said, you get to play it by ear. but its a pretty basic ratio, sometimes a little more water, sometimes a little less.. no bigyyy

    i would only add: be carefull when you push down on the tortilla baloon! it has veryy hot steam that will seep out from a random spot of the tortilla and it burns! (experience talking ¬¬)
