Standard procedure in the real world is gear UP immediately once the VSI needle shows positive rate of climb.
Pitch ATTITUDE is a very different thing from ANGLE OF ATTACK.
You can easily be 20º nose up attitude and have an AoA of just say 5º.
And on initial climb you don't fly an attitude. You fly a SPEED.
You fly whatever nose up pitch is necessary to maintain the computed initial climb speed (usually v2 + 10kt). That can be between 10º and 25º depending on weight and power setting.
i have a question, is there a way i can choose my own airports and the game gives me the flight pattern altitudes, speed, and so on?

you could have a pitch attitude of 0* degrees but have an attack angle of -90* degrees (a perfectly straight down stall)

Your pattern confuses me. FAA standard is left-handed and you were at an ATC airport. Why did you go right?

Because there are mountains north of this airport in the real world, and the SID of RCSS runway10 is usually turn right.
