Yeah the canyon you probably did was Bezorgue Parts123.or another canyon called Pas De Fur.The ardeche has a few good canyons,but if you want to step it up a level in France the places to check out are: Maglia(Alpes Maritime),Ecouges1+2(Vercor region)and Llech(Pyrenees orientals)
all of these areas have loads of top canyons and guide books for them,i have recommended some of the top canyons in them areas.
