I see videos of "monks" training in shaolin schools but they wear sweats. I also see some videos like this one where they actually train in monk's robes in the temple. So what determines where you train at? or are they dressed up just for the show? It seems like most train in schools now and dress up only for performances

The term Kung means energy while Fu means "time". The loose translation would be "Patient Accomplishment". To have exerted great energy toward a goal, over a long period of time. Kung Fu is a reference to the process, not like "Karate", which is a reference to the actual technique (open hand).

That being said, fighting, battles, "how would this do against [insert martial art style]" is unimportant. It is about focus, dedication and personal growth.
