"What is knife skill?" - That is a great question. It has less to do with speed and more to do with precision... A butcher could process a cow, but be lost on fish. A Sushi chef wouldn't know what to do with a full lamb... There are some fast veg/fruit prep cooks out there that never touch meat... Knife skill has more to do with quality of the outcome. Speed comes with experience. Speed does not equal skill if precision is not the result.
lol nooo i only use top quality knifes....i am not sure which one your talking about...lol i think i am using a kasami, in one, a messermeister elite an american made gerber vegie chopper from the seventies i have chun and hinkle.. what is a miracle blade three lol
some knife that some chef cook are using here (some chef i know) but it does look like one xD they are pretty sharp and they all come with a set of cook knife
my only real issue is, why is the table so dang low? I have all of the stainless steel tables at work adjustable. So each Chef can feel comfortable doing their work. Raise it up, your back will love you.
Touche, Cooking is a such a multi-dimensional trade and very subjective. So I can respect your opinion as you emphasize on a different aspect then myself.
cutting is a art; no matter which way you cut it ! My question is, can a knife be too sharp for the kitchen? take into consideration slicing melons,and other bulky objects.

I've been looking around youtube trying to find how to get a really *finely* finely chopped onion.
Now I know :D
I'm going to practise that method from now on.
