This bread belongs in the waste bucket. I have had my own bread business , and there is nothing good I can say about this bread. don't waste tim or ingtrdients I have made plenty of bread in my day, and there is something she is leaving out, so I did it my way and the same amount of time and it turned out wonderful
Yes 40 minutes maybe longer it should double before you put it in the oven.
It all depends on temperature and humidity of where you are for how long that may take. This is the method for Artisan bread it ferments slowly in the fridge giving it a sour characteristic.
