The angle of the deba is set at the factory. The bevel is still held flat against the stone. This assumes, of course, that you're talking about a traditional, Japanese styled, single bevel deba.

One question, why are you using gloves? personally I like to feel the metal while I sharpen, but If there is any reason, of wear gloves let us know.
