  • Hi, just wondering what the recipe for royal icing is that you use? I find that mine always ends up with a royal icing that is too brittle once dried... thanks!

  • @lannterg Hello tanks for your interest and here's my recipe for Royal Icing:

    500 grams of icing sugar (I have used both icing mixture and pure icing sugar - both work fine), 3 tablespoons of Actiwhite (this is a dried egg white powder ... it can be hard to get) and about 1/4 cup of water. I add the water gradually until I have a mix that is not too stiff and not too runny ... the amount of water required can depend on the weather. If you can't get the Actiwhite you can just use egg whites.

  • hi again ... I found pillar box only went a pinky shade - not red. Yeah, I like the cachous too - nice and shiny.

  • How do you make the icing so thick? Do you have to refrigerate them for it to harden? Nice videos by the way!

  • Hi Corynn. No, don't put them in the fridge, just leave them on the table and they'll go hard in a day or so. Putting them in the fridge can cause condensation which makes them go soft. The recipe I use for royal icing is 500grams of icing sugar and 3 tablespoons of actiwhite (dried egg whites). I mix that together then add water until I get the consistency I want - it's usually around 1/2 cup water, but I add it slowly and let it mix for a while before adding more.
