  • Sorry Chef John, homemade caramel sauce imho is soooo much better. I have made both and the canned milk version is not near as complex in flavor. Where is the vanilla, salt and butter you use in homemade sauce? All of those things give it an unbelievably great taste. This version is for people who think making the real stuff is difficult when it really isn't.

  • 3-4 hours is a long time:) I make a lovely dulce de leche cheesecake and I just take a can of swtnd conds'd milk and microwave it for 2 min intervals and whisk in between so that the mixture is uniform in colour, texture and of course, taste. Usually, I only end up microwaving for about 18-24 minutes and the result is so nice I'm not allowed to go over to certain friends places unless I bring one of the cheesecakes I make w/ this stuff:) Hope you enjoy it if you try making it this way:)

  • @diegomanya17 theres 2 kinds ( that i know of ) of dulce de leche.. Theres a more chunkier version that can be made with sour milk and theres this one.... I have a background of Cubans , spaniards , etc

  • I actually saw a way to do this without puncturing the can so that you can turn it throughout cooking and avoid the lumps on the bottom. Of course you're just trading one chore for another so I guess it doesn't matter. Either way, excellent recipe!

  • Dulce De Leche - (dool-se daeh leh-che) - Candy Of Milk. Not "Sweet from milk" ofcourse it's sweet, but actually dulce de leche is firm but soft and it melts in your mouth. The other version is the thick but runny type that is also called caramel. "Ditto" There is a Mexican dressing that is made of goat's milk and other ingredients but it's called Cajeta.

  • @lagiulietta19 yes, in Italy, it is pronounced like that, in Italian. However, in Spanish countries, where it originates, it's like "dulse." I live right next to the Italian border and I speak Spanish so I know this :)

  • All you need is 90 minutes. You don't need holes, just completely submerge and keep H20 at a slow boil, let cool and your good....It won't blow up in your face...have fun cooking

  • This is better than how I learned to make it. I learned to keep the can closed but submerged in water. It works and doesn't explode, but you have to let it cool and solidify before you can open it, and you can't check the color while cooking.

  • I made this today and it was amazing!! After cooking for 3 hours it was quite a few shades darker (like caramel) than the one shown above and after it was cooled, much thicker. It was hard to tell that it was done becauce the milk at the top of the can was much lighter so I was not sure if it was ready, but luckily it was perfect!

  • My grandma(mexican) would make it out of fresh milk. Then they would slowly cook it in a pot or something o.O steering it for hours lol n I think they would add sugar.... Not sure... They would make their own cheese to.

  • @shadowort2287 Dulce de Leche kinda means that you have sugar with the milk , The way of boiling condensed milk is just an easier way. The proper way to make dulce de leche ( imo ) is to do it with milk and sugar and sum soda, or i just call my granny for my birthday and asks her to send me some xD

  • @SweetMillefeuille It's hard to describe the way it should be pronnounced in english, the creator gives it an italian accent, Dul should be said as "pull", Ce as "Selena", De as "see" without the second e, Le as "Lecter", and Che as in "Che guevara".

  • @greatrulo Not. CE is not readed as SE (only in center and south america do it) The sound of CE is like TH like " think" and DE is like Dentist for example ; ^)

    CA = KA ( like Car )

    CE = ZE or TH (like in word think) (in South America* sound SE)

    CI = ZI (think) (SA* sound SI)

    CO = KO ( Control )

    CU = KU or QU

  • @themadzucchini No,only in mexico,center and south america do it. Letter C is spanish can me readed as K or as TH( for example as in word " Think") depends of the word. Sound as K when is before A-O-U,sound as TH when is before I-E =). To make sound K with i or E we use "QU -I/E"

  • I'm from Brazil and I'll tell you a faster way to do that ... not dangerous at all. Put the can in a pressure cooker for one hour. Do not make holes on the can! Take off the label so that it won't clog the pressure valve and cook it inside the pressure cooker for one hour. Turn off the heat and let it cool down 'till it is in room temperature otherwise the pressure inside the can will make huge mess in your kitchen.   • Chef John there's an even easier way to make this: put the tin inside a pressure cooker and cover the can fully with water plus 20% of more water, also don't make those holes on the top of the tin. Close the pressure cooker and cook it at medium heat for 20-25 minutes for that consistency you like and 40-50 minutes to make it really thick. When taking of the cooker be really careful n make sure to submerge it in cold water for 10 minutes, then you can make those holes and open it all. Enjoy! :p

  • I'm from argentina, and i can tell you that this guy makes it very well, but his way it's like very soft, and smooth. But here in argentina, we don't make dulce de leche out of a can of whatever it seems to be, we have a lot of process to make it, but it the end, it's the wonderful argentinian Dulce De Leche. You may want to freeze it, because with more consistence, it's better.

  • My grandpa used to do this. except he didn't put holes. He put the can of condensed milk in a deep pot and boiled it for 4-6 hours (and adding more water along the way) epending how dark he wanted it. IT WAS AMAZING.

    And he called it Dulse not Dulche. idk maybe its just us.

  • a little tip from argentina;overcooke it up to 5 hs then you'll get a thicker dulce de leche, use it for stuffing pancakes or vainilla cakes; dulce de leche ice-cream with chocolate chips is an ELIXIR FOR YOUR MOUTH, instead of peanut butter and jelly place dulce de leche instead the peanut butter, flavourise your coffes with a little spoon of it and it would be delicious; thx for spreading a video about our typical dish =D !!
