The tampon sucks up moisture. In this context, it removes a thin layer of mucosa (sp?) from the surface of the tongue, thus making it easier to perceive flavour (since the flavour compounds are able to enter into the olfactory bulb behind the nose, rather than being trapped by the mucosa and swallowed).

Not all the saliva. Saliva acts as a catalyst in that it helps to break down the food cells, allowing flavour to escape and travel to the olfactory bulb. It is mucosa that is being removed.
