  • I used my Zojirushi Bread Machine set on "DOUGH" cycle. You always have to "fine tune" a yeast dough so that is normal. The machine really takes the grunt work out of yeast dough.

  • Alton Brown is a NUT.... The coolest nut I know! His shows are GREAT!!! Other than pretzels Phillidelphia (and their friend Michael Vick) is a sheet hole DUMP.

  • I think there are a couple of things it could be. Different environments and humidity can affect the amount of flour you need. It may be possible that you need to add more flour. It could be that you are not kneading the dough enough. If you have a stand mixer, it's possible that the dough is getting OVER worked. Good luck.

  • Nah, not overworked. If you overwork your dough, it'll collapse and get all watery because the gluten will squeeze out the water content. It's probably in need of a lot more kneading.

  • I too had this issue the FIRST time I did the recipe. I thought about adding more flour, but did not since it was the first time I had prepared that kind of dough. On attempt #2 I used 23 ounces of floud (instead of the recommended 22) and the dough came out FANTASTIC. The mustard, I am in the middle about. I made the mustard following the directions to the letter, and I love the flavor, but my god is it spicy.

  • It's a LOT of work to do it that way. I've made pretzel bread this way and it's hot work with a good deal of clean up.

    The Good Eats team goes the route that yields the best product within reason. If there's an easier means to accomplishing the end with results so similar that it hardly affects the quality in the eyes of the average consumer, they'll take that route. But AB almost always explains how it's normally done and why that route wasn't taken.

  • experiencing the world for yourself is an experience far more valuable and makes you a wiser person all around rather than sitting in a couch watching a television show.

  • Ah, another one of my favorite episodes...I love pretzels. Mostly the crunchy ones, though.

  • They built a microwave without a magnetron tube in it. All they do is heat the water and melt the butter then put it in the fake microwave.

  • How else can you show food turning in a microwave. The food is real as is the cooking times. As he pointed out in behind the eats camera time is expensive. If it takes more then 2 mins to do it's been cleverly swapped for a finished item. Note that he also admits to accidentally melting a camera in the oven.
