  • I'm glad someone talks some sense about deep frying. Everyone is so deep fry-aphobic because they think the food absorbs all the oil. It does if you screw up, but as Alton said, hydration is key. Lots of oil, and soak your potatoes so they can hold in more water, and you will have fried food that isn't oily and greasy.

    So he takes that quote for his own, and keeps grilling meat on Friday, saying this to his game:

    that may be true, but beer brings more flavor AND a pH difference to the party.

  • Soda pop has too much sugar and acid, it may prove tricky when frying. Try using plain carbonated water, it will have more or less the same effect. Altough beer adds an extra flavor the end result should be the same. ^^

    Of course, if you were joking please ignore my commentary and forgive my busted humor radar, lol. XD

  • That's very possible. I don't know why you got thumbs down on this one, this is a good point, make sure you have good fish. No matter how good a recipe is, bad ingredients ruin it.

  • Funny you say that because Alton Brown himself did a show on food myths and prooved that not all the alcohol is cooked out.

  • He did a show on food myths but that wasn't one of them. He said that ALL the alcohol doesn't evaporate in his sauce show.

  • Deadman, I think he was saying that he can't purchase the beer, not that he was worried about the beer batter. Beer batter is fine for underage. And Yes, the alcohol is never entirely cooked out, but with beer, since it's so low already, its marginal.

  • @Elamdri And he's be mistaken: there are cooking beers that you can get your hands on, even if you are underage. Heck, since the alcohol is not really that important, you could try non-alcoholic beer (which, like decaff coffee, does contain a little of the substance).

  • TrojanManSCP, check out j oliver's, as well as Bobby Flay's NY cook-off opponent's (somewhere on youtube)fish and chips version, versions. Do the chips in peanut oil. Hard to beat. Chase it with Guinness.

  • Fish and Chips is, IMHO, the best food ever invented. Spuds, beer, fish, seasoning, crispy, tender, juicy... with a good tartar and some malt vinegar (wedge of lemon) I'd be hard pressed to think of a meal I'd enjoy more. Thanks be to Cod!

  • I just tried the fries according to this recipe. I will never cook fries the same. There is a huge quality difference in my old recipe and in Alton's. Fries are crispy on the outside and soft but done on the inside. Thanks, again, likethehat.

  • Nope, it's not his real sister ... she's played by Merrilyn Crouch. If you make fried foods the right way and even just go for a 30 minute walk everyday, you shouldn't have a problem ... I lost 60 pounds in 6 months just by walking ... :)
