  • I've noticed that in Japanese cooking, the chefs often skim the scum off of soups and stews and such. Is there a specific reason for this? What I mean is, is it really necessary? Or is it just to get a better quality final product?

  • @onesickpuppy97 it's not really necessary, although it can remove some possible bitterness from the final dish. it'll be tasty anyway! :)

  • @onesickpuppy97 it's not especially method in the japanese or asian cuisine, that you remove the foam of the soup, but sometimes it's neccerssary to avoid the bitterness in the final dish and remove some possible "toxic" elements, which was cooked out from the vegetables like pumpkin, broccoli or coliflower

  • Has anyone tried this with acorn or butternut squash? This seems easy to make but I'd like to make sure the squash I use suits the recipe.

  • @dittokitty85 I'm guessing that it makes enough for 3-4 people and yeah you can make this with almond milk. You may want to use an animal stock (home made if you can) though, milk adds a heavyness to soups that other types of 'milk' can't. Homemade stocks (not-defatted) will help to offset that missing mouthfeel.

  • @dittokitty85 about 3 serving small bowls....and also i used a smaller pumpkin..and ya u can make it with almond milk i guess!hey tel me how it turned out..milk added a nice texture i guess it wont get that creamy with almond milk..and also i didnt put the cream in.cuz i used whole milk not skim milk.

  • you can also use a pumpkin puree to help shorten time. Although I know one of my favorite methods of skinning pumpkins is to either bake them until soft enough to skin or I will boil them skin and all and when softer scoop out the meat.

  • @citrusoda2009co a regular pumpkin might not do well. a baking pumpkin may be better. they're thicker, and made for baking/cooking.

  • @MelodiaSeira You can get Kabocha this time of year at any regular supermarket. Do you have a Trader Joe's? You can find them there too. I was able to get mine at the local Smith's grocer.

  • @MelodiaSeira The taste probably wouldn't taste the same. Kobacha pumpkin is creamier compared to regular pumpkin we're used to. But I think it probably is possible to do with a normal pumpkin, just try adjusting ingredients to taste.

  • I made a vegan version of this for a friend yesterday and it was delicious. I used vegetable stock cube in stead of chicken, and no cream or milk. I added som sauteed onion slices in stead of crackers just to get some nice texture.

  • May i suggest using a potato masher instead of a hand blender that way you get smmoth textuer with slight bits and tinstead of a baby food like texture.
