I would suggest buying a few moso plants from one of the temperate bamboo nurseries. Let your grove develop from true clones of your desired species. Most seed sources are a scam. You could be wasting valuable growth time with seedlings of unknown origin.
I just bought 200 moso seeds and 200 heteroclada (water bamboo) seeds and about 3 weeks ago i bought 20 moso seeds to experiment with and like you in about 2 weeks i got 2 seedlings... the rest are still germinating.

Be careful. Moso bamboo can spred very fast when planted out doors and can destroy your backyard if you dont cut or contain the plant with a barrior.
