@seatedcrab Depends w/c part of the region you are,if you are from the South/visayas,we do put onions,but if you are tagalog or from the north,most of them don't put one. As long as the main ingredient of an adobo is there,soy sauce, vinegar,bay leaf,garlic,salt and pepper,then you have an adobo.

So I'm thinking this maybe how adobo is done from where the author of this video is from but generally,ginger is not your usual ingredient 4 adobo.

Never put Ginger and Onions in my adobo.. I have my own version and what i like about your and mine is the souce. Some people make it more like a soup. i think it's more tasty when you reduce the soup into a thick sauce.

Thanks for sharing this. I just wish the amount of water and vinegar are quantified (an amount of.....is vague). But overall, good job. Humba and Paklay are uniquely Visayan dishes which I like so much.
i'm from pampanga and i also don't use ginger on pork adobo. but overtime i learned that ginger plus vinegar can be used to get rid of pork's pungent smell specially when boiling it.
