  • hmnn, i decided to use the sirloin pork chops instead of using the belly portion of the pork to get "less cholesterol" from the fat we can get from the belly portion. but, the taste is just bland. really, the best part is when the pork have the layer of fats with it. hmnnn yummy cholesterol!!!! NO FAT, NO SQUAT!

  • i prefer more bawang from ilocos and sukang iloko for this. the smell is really really good. and mas maganda sakin kpag nagmamantika at hindi yung may sabaw hehe.

  • I really don't care if it's the belly or fatty portion of the pork. What is bad for you it's good for me... Don't like it then take your happy ass to burger king... Have it your way b!cth... I love ADOBO

  • Your adobo is nice. but I just wonder, why you called or describe it as "stir fry pork"? Adobo is not stir fry. Adobo is just adobo. That makes this dish unique because there is no English term for this. This is the first time i've heard of this term in my whole life being a Filipino.

  • as far as i know you dont put onions in adobo...only garlic, pepper, bay leaf, vinegar and soy sauce

  • @seatedcrab Depends w/c part of the region you are,if you are from the South/visayas,we do put onions,but if you are tagalog or from the north,most of them don't put one. As long as the main ingredient of an adobo is there,soy sauce, vinegar,bay leaf,garlic,salt and pepper,then you have an adobo.

  • Your adobo version is kinda different from the hundreds that I've seen. You use ginger (w/c I don't understand why) and you do not use bay leaf or laurel leaf. Anyways,this is your version and it kinda looks adobo too so I guess this is just a case of "to each his own".

  • @mrBullsheet - w/c one is humba? this video of Juan Putahe? First,the title alone clearly says it's adobong baboy,not humba. Second,humba uses pork feet/knuckles,banana blossom and brown sugar as part of the many ingredients...not one of these was in the video shown. I cook both so I know what I'm talking about.Even humba doesn't use ginger either. So I'm thinking this maybe how adobo is done from where the author of this video is from but generally,ginger is not your usual ingredient 4 adobo.

  • @chickboy359 adobo is sour while humba is sweeter and softer. humba is fatty pork dish, mostly skin and with the addition of black beans and tons of sugar. humba is more like a chopped "pata tim".

    by the way, depending on the region, ginger is fine with adobo. we use ginger here in Mindanao.

  • @haydnesque cooking adobo,humba and pata tim has evolved in time. People experimented,added and tested w/ varieties and each versions so none has really a legal claim what an authentic adobo is. I agree that this has been a regional "to each his own" story so none of us is right or wrong on about anything in here.Curiousty just leads to these questions but it doesn't mean that one is claiming that you are doing it incorrectly. Anyways,keep on cooking and show others how it is done "your way".

  • Never put Ginger and Onions in my adobo.. I have my own version and what i like about your and mine is the souce. Some people make it more like a soup. i think it's more tasty when you reduce the soup into a thick sauce.

  • i'm from pampanga and i also don't use ginger on pork adobo. but overtime i learned that ginger plus vinegar can be used to get rid of pork's pungent smell specially when boiling it.

    but then again, ginger is also another spice.
