About where the bird's looking: it's a common mistake to think birds look where their beak is pointing. Most of them, having eyes on the side of their heads, have to turn their head sideways to take a better look at something. Nice video, btw.
Great footage, i have seen a grey heron unsucsessfully hunt a rabbit before so the behaviour seems normal but i have held in my hand a fully intact herons skull and i am amazed that they can swallow such large prey considering the narrow jaw they have.
Also.....The reason this Heron, is continuing to release & drop this Gopher or Ground Squirrel, isn't because its making sure its prey is dead. Usually one spear, from a bill that sharp and of that size, is enough to kill its prey. However....Its because, with larger prey they need to make sure, the "angle" is just proper enough for them to swallow large prey whole, or else they'll choke to death. Also, this is NOT near any water, they usually "soften" there prey this way before eating it.......
I've been in the avian field, for nearly 15yrs now. This footage, obviously doesn't surprise me, in the least. Heron's are notorious, for eating ANYTHING and i mean anything, they can fit down there throats. I've seen Great-Blue Heron's eating Rabbits whole, believe it or not...!!! This all said, they "prefer" fish, salamanders, crayfish, small turtles, etc...But if there hungry, WATCH OUT....!!! Great video capture, by whomever got this footage.

I wonder how long it would take the stomach of that heron to digest the gopher.
